Hash Browns with cheese and eggs

Youll need:

3 grated potatoes
2 eggs
1 dl grated cheddar
1 tbsp finely chopped chives
Salt and pepper
Butter for frying.

Serve with crispy baguette.

Cheesy, crunchy and surprisingly easy to make. The perfect outdoor breakfast or lunch.

Instructions:

  • Heat some butter in the pan, spread the shredded potatoes and fry until golden. Salt and pepper.
  • Flipand make two holes for the eggs. Add a little more butter in the holes and crack in the eggs. Season the eggs with salt and/or pepper.
  • Fry until the egg white sets (use a lid, another frying pan or some aluminum foil if you want to cover the pan).
  • Add some grated cheddar and sprinkle on the chives. Serve with crispy baguette. Enjoy!
